Halloween Stuffed Peppers!

Happy Halloween!  What better way to celebrate than making AMAZING stuffed peppers that look like Jack-o'-Lanterns! The credit for this one has to go to my amazingly creative sister.  She came up with this idea and recipe...and they were delicious!  We always aim to make our dinners tasty and easy but we are college students and always feel like we don't have enough time to cook.  Finding new recipes (or creating them ourselves) that are fast and easy is something that we love to do.  Check out this awesome and easy Halloween themed meal.  Promise...you will not be disappointed!

Ingredients:

3 Bell Peppers, orange
1/2 Pound Ground Turkey
1/2 Onion, chopped
1 Roma Tomato, diced
2 Cloves Garlic, minced
2 Tablespoons Parsley
2 Tablespoons Yellow Mustard
1 1/2 Tablespoons Worcestershire Sauce
1 Egg
Salt and Pepper, to taste
Cheddar Cheese


Directions:

1. Preheat oven to 350 degrees.
2. Cook ground turkey on the stove until it is fully cooked.
3. Combine cooked ground turkey with all other ingredients into a medium size mixing bowl.
4. Cut tops off peppers and remove all seeds.  Carve Jack-o'-Lantern face into the pepper!
5. Stuff mixture into the pepper.
6. Place in backing pan and cook for 30 minutes.  Peppers should be cooked all the way through so it may take a little longer depending on your stove.
