Freezer Meal: Cilantro Lime Chicken

If you feel like you are to busy to cook full meals during the week but have a few hours to spare on the weekends, then you should try meal-prepping and make a bunch of freezer meals!  My sister did this for us a few weeks ago and spent about 2 hours in the kitchen prepping everything and putting them into Zip Lock bags to freeze.  This makes dinner so easy!  On the days that we aren't home until late, we throw one of these freezer meals in the Crock Pot and let it cook on low all day. By the time we get home from school, dinner is all ready to go and we don't have to worry about cooking!  Other times with these freezer meals, we take them out to thaw and put them in the oven to cook.  We usually only do this when we forget to put it in the Crock Pot before we leave for the day.  Either way, making freezer meals will make cooking dinner a whole lot easier!  The meal that we cooked tonight was a Cilantro Lime Chicken and it was delicious!  This is definitely one of our favorites and way to good to not share...try it and enjoy!  This recipe makes a lot so my sister and I cut it down for just us but I am going to give you the full recipe and you can do what you want with it.

Ingredients:

2 Gallon Zip Lock Bags
6 Chicken Breasts
3 Tablespoons Olive Oil
2 Limes, juiced
4 Cups Cilantro
4 Garlic Cloves, minced
1 Onion, chopped
2 Cans Black Beans, rinsed and drained
1 Bag Frozen Corn
2 Teaspoons Cumin
Salt and Pepper
Tortillas or Corn Chips
Sour Cream
Shredded Cheese

Directions:

1. Split all contents in half to fill the 2 Zip Lock Bags.
2. Combine all ingredients in the bags and freeze.

Cooking in Crock Pot
When ready to eat, pull meal out of freezer and put directly into Crop Pot.  Cook on Low for 6 to 8 hours.

Cooking in Oven
Take meal out of freezer in order to thaw.  When it is completely thawed, place contents of bag into a 9x13 baking dish.  Cook at 375 Degrees for about 30 minutes.

3. Once cooked and ready to eat, add chips or tortillas, sour cream, and cheese.
4. Enjoy!
