Gluten Free Zucchini Pizza

I love trying new things for each meal.  I only have about an hour break for lunch and decided to try this new recipe.  I have seen this recipe a lot and I had most of the stuff in my house already to make it!  All I had to buy was the zucchini and I am glad I did it!  If you love pizza like me but want a healthier alternative this is for you!  It was super easy and only took about 10 minutes to put together and 15 minutes to cook!



Ingredients:

6 Small Zucchini
1 Tablespoon Olive Oil
1 Clove Garlic, finely minced
Salt and Peper
1 Cup Marinara Sauce (I used Prego Tomato and Basil)
1 1/2 Cups Shredded Mozzarella Cheese
1/3 Cup Shredded Parmesan Cheese
1/2 Cup Mini Pepperoni Slices
2 Tablespoons Fresh Oregano, chopped

Directions:

1. Preheat oven to 400 degrees and line baking sheet with Tin Foil (this makes for easy clean up!)
2. Cut each zucchini in halves through the length (if they don't have a flat back, slice a thin slice off in order for it to lay nicely in the pan)
3. Brush olive oil and garlic onto zucchini slices, sprinkle with salt and pepper to taste
4. Place heaping spoonful of marinara sauce over each zucchini slice
5. Spread as much cheese as desired
6. Place pepperoni slices close to the middle of each pizza
7. Bake in oven for 15 minutes
8. Remove from oven and sprinkle with chopped fresh oregano

I really enjoyed this because I am a HUGE fan of zucchini.  My sister, however, felt as though all she could taste was the zucchini.  If you are not a huge fan of zucchini, I recommend that you slice the zucchini thinner but think you would still really enjoy it!
